Description

Start your day with this scrumptious Breakfast Hash, featuring crispy potatoes, savory sausage, vibrant bell peppers, and perfectly cooked eggs. This dish is not just a meal; it’s a celebration of flavors that brings warmth and joy to any morning. Easily customizable, the Breakfast Hash is ideal for brunch gatherings or cozy solo breakfasts.

Ingredients

Scale
  • 2 cups diced Yukon Gold potatoes
  • 1 cup diced bell peppers (assorted colors)
  • 1 cup diced sweet onion (like Vidalia)
  • 1 cup cooked sausage (your choice: spicy or mild)
  • 4 large eggs
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp paprika

Instructions

  1. Prep your ingredients by washing and dicing the potatoes into small cubes. Chop the bell peppers and onion finely.
  2. In a large skillet over medium heat, add the olive oil and sausage. Cook until brown and crispy, about 5-7 minutes.
  3. Add the diced onions and bell peppers to the skillet. Sauté until they soften, approximately 3-4 minutes.
  4. Stir in the diced potatoes, salt, pepper, and paprika. Cover with a lid and cook on medium-low heat for about 15-20 minutes until the potatoes are tender.
  5. Create wells in the hash for the eggs. Crack an egg into each well and cover again until whites are set but yolks remain runny, about 5 minutes.
  6. Serve hot with optional toppings like fresh herbs or avocado slices.
