  • 1 lb lean ground beef
  • 4 medium Yukon Gold or Russet potatoes, thinly sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups shredded sharp cheddar cheese
  • 1 cup whole milk
  • 10.5 oz can cream of mushroom soup
  • Salt and pepper to taste
  • Optional: Dried herbs (thyme or oregano)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, sauté the diced onion in olive oil until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
  3. Add the ground beef to the skillet, breaking it apart as it cooks until browned (about 8 minutes). Drain excess fat and season with salt and pepper.
  4. Layer half of the sliced potatoes in the greased baking dish, followed by half of the beef mixture, then half of the cheese. Repeat layers.
  5. In a bowl, whisk together milk and cream of mushroom soup until smooth. Pour evenly over the casserole layers.
  6. Cover with aluminum foil and bake for 45 minutes. Remove foil for the last 15 minutes to let the cheese bubble up until golden brown.
  7. Let cool slightly before serving.
