  • 2 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 lemon (zest and juice)
  • 1 cup instant couscous
  • 2 cups mixed vegetables (bell peppers, zucchini)
  • 2 tbsp fresh herbs (thyme, parsley)
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels, then rub with olive oil, salt, pepper, minced garlic, smoked paprika, and lemon zest.
