  • 4 cups romaine lettuce, chopped

  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Toss halved Brussels sprouts with 2 tablespoons of olive oil, salt, and pepper on a baking sheet.
  2. Roast for 20-25 minutes until golden brown and crispy.
  3. While roasting, whisk together minced garlic, Dijon mustard, lemon juice, remaining olive oil, salt, and pepper in a bowl until smooth.
  4. In a large bowl, combine chopped romaine lettuce with roasted Brussels sprouts. Drizzle dressing generously over the salad.
  5. Sprinkle grated Parmesan on top and serve immediately.
