  • 2 medium zucchinis (about 300g), sliced into half-moons
  • 2 cloves garlic, minced
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1/4 tsp freshly cracked black pepper (adjust to taste)
  • 2 green onions, chopped

Instructions

  1. Wash and dry the zucchinis; slice them into half-moons about half an inch thick.
  2. Preheat your grill or skillet over medium-high heat until hot.
  3. Add the zucchini to the pan and sauté for 3-4 minutes until slightly golden.
  4. Stir in minced garlic and drizzle with sesame oil; cook for another 30 seconds until fragrant.
  5. Pour in soy sauce and season with black pepper; cook until zucchini is tender but still crisp (about 2 minutes).
  6. Sprinkle chopped green onions on top just before serving.
