- 4 dried guajillo peppers
- 5 cloves fresh garlic
- 1 large onion (sweet)
- 4 cups low-sodium chicken broth
- 1/4 cup fresh cilantro (chopped)
- 2 lime wedges
- 8 oz ramen noodles (fresh or dried)
- 2 green onions (sliced thinly)
- Optional: 1/2 cup sour cream or crème fraîche
Instructions
- Sear the beef chuck roast in a large pot over medium-high heat until browned on all sides.
- Blend soaked guajillo peppers, garlic, onion, and 1 cup chicken broth until smooth.
- Add the blended sauce and remaining chicken broth to the pot; cover and simmer on low for about 3 hours until the beef is tender.
- Remove the beef, shred it with two forks, and return it to the pot.
- Cook ramen noodles according to package instructions; drain well.
- In serving bowls, layer noodles, top with shredded beef and ladle hot broth over everything. Garnish with cilantro and green onions.
