Ingredients

  • 2 lbs beef chuck roast
  • 4 dried guajillo peppers
  • 5 cloves fresh garlic
  • 1 large onion (sweet)
  • 4 cups low-sodium chicken broth
  • 1/4 cup fresh cilantro (chopped)
  • 2 lime wedges
  • 8 oz ramen noodles (fresh or dried)
  • 2 green onions (sliced thinly)
  • Optional: 1/2 cup sour cream or crème fraîche

Instructions

  1. Sear the beef chuck roast in a large pot over medium-high heat until browned on all sides.
  2. Blend soaked guajillo peppers, garlic, onion, and 1 cup chicken broth until smooth.
  3. Add the blended sauce and remaining chicken broth to the pot; cover and simmer on low for about 3 hours until the beef is tender.
  4. Remove the beef, shred it with two forks, and return it to the pot.
  5. Cook ramen noodles according to package instructions; drain well.
  6. In serving bowls, layer noodles, top with shredded beef and ladle hot broth over everything. Garnish with cilantro and green onions.
