  • 9 oz no-boil lasagna noodles
  • 1 lb lean ground beef
  • 2 tbsp Cajun seasoning
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 14.5 oz canned diced tomatoes (fire-roasted preferred)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped (any color)
  • Fresh parsley or basil for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Chop onion, garlic, and bell pepper.
  2. In a skillet over medium heat, sauté onion and garlic until fragrant. Add ground beef and bell pepper; cook until browned.
  3. Stir in diced tomatoes and Cajun seasoning; let simmer for 10 minutes.
  4. In a bowl, mix ricotta with half of the mozzarella, Parmesan, salt, pepper, and parsley.
  5. In a baking dish, layer meat sauce, noodles, cheese mixture; repeat until ingredients are used up.
  6. Cover with foil and bake for 25 minutes. Remove foil, add remaining mozzarella, and bake uncovered for another 15-20 minutes.
