- 9 oz no-boil lasagna noodles
- 1 lb lean ground beef
- 2 tbsp Cajun seasoning
- 15 oz ricotta cheese
- 2 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 14.5 oz canned diced tomatoes (fire-roasted preferred)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped (any color)
- Fresh parsley or basil for garnish
Instructions
- Preheat oven to 375°F (190°C). Chop onion, garlic, and bell pepper.
- In a skillet over medium heat, sauté onion and garlic until fragrant. Add ground beef and bell pepper; cook until browned.
- Stir in diced tomatoes and Cajun seasoning; let simmer for 10 minutes.
- In a bowl, mix ricotta with half of the mozzarella, Parmesan, salt, pepper, and parsley.
- In a baking dish, layer meat sauce, noodles, cheese mixture; repeat until ingredients are used up.
- Cover with foil and bake for 25 minutes. Remove foil, add remaining mozzarella, and bake uncovered for another 15-20 minutes.
