- 1 lb pork belly, cut into bite-sized pieces
- 2 cups aged kimchi
- 1 cup firm tofu, cubed
- 2 tbsp low-sodium soy sauce
- 4 cloves garlic, minced
- 3 green onions, thinly sliced
- 4 cups vegetable stock or water
- 2 tbsp gochugaru (Korean chili flakes)
- 1 tbsp sesame oil
Instructions
- Gather all ingredients. Chop pork belly and slice green onions.
- In a large pot over medium-high heat, sauté pork belly until crispy (5-7 minutes).
- Add minced garlic and sauté until fragrant.
- Stir in kimchi; cook for an additional 2-3 minutes.
- Pour in vegetable stock/water, soy sauce, and gochugaru. Bring to a boil, then reduce to a simmer.
- Gently add cubed tofu; simmer uncovered for 15-20 minutes.
- Drizzle sesame oil over the stew before serving and garnish with sliced green onions.
