- 1/2 cup brown sugar
- 1 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1 tsp vanilla extract
- 1/4 tsp salt
- Optional: 1/2 cup chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a saucepan, melt butter over medium heat until golden brown and nutty in aroma; set aside to cool slightly.
- In a mixing bowl, combine browned butter, granulated sugar, brown sugar, vanilla extract, and pumpkin puree; mix until smooth.
- In another bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and ginger. Gradually add dry ingredients to wet mixture until just combined.
- Scoop tablespoon-sized balls of dough onto the prepared baking sheet, spacing them two inches apart. Optionally use ghost-shaped cookie cutters.
- Bake for 10–12 minutes or until edges are lightly golden. Let cool before transferring to wire racks.
