  • 8 cups cubed day-old sourdough bread
  • 2 cups mixed wild mushrooms (shiitake, cremini, oyster)
  • 2 cups vegetable broth
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tsp fresh thyme leaves
  • 2 tsp fresh sage leaves, chopped
  • 4 tbsp unsalted butter
  • 1/4 cup toasted pine nuts
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Prep the ingredients by dicing the onion, mincing the garlic, and slicing the mushrooms.
  2. In a large pot over medium heat, melt butter and sauté onions until translucent (about 5 minutes). Add garlic and cook until fragrant.
  3. Stir in mixed mushrooms and herbs; cook until mushrooms are golden brown (about 8 minutes).
  4. Add cubed sourdough bread and gradually pour in vegetable broth while stirring to combine.
  5. Preheat oven to 350°F (175°C). Transfer mixture to an oven-safe dish or keep in pot. Bake uncovered for 25-30 minutes until golden brown on top.
